Guests are graciously welcomed to indulge in a Champagne reception upon their arrival, setting the tone for an exquisite dining experience. The culinary journey commences with a tantalising Supreme Royal Dim Sum Platter, featuring delicate and flavourful dim sum creations. Following this, guests will delight in the Deep-Fried Softshell Crab with Curry Leaf Dressing, offering a perfect blend of crispy texture and aromatic flavours. The Salt and Pepper Squid Stuffed with Minced Prawn presents a harmonious fusion of seafood goodness.

Moving on to the intermediate courses, the spotlight shines on the Legendary Peking Duck with Oscietra Caviar, a dish of unparalleled luxury and taste. Served with homemade pancakes and lettuce wraps, this course promises to captivate the palate.

For the main course, guests will be treated to a selection of culinary masterpieces. The Slow Cooked A4 Wagyu with Chef’s Special Sauce offers a melt-in-your-mouth experience, showcasing the premium quality and rich flavours of the Wagyu beef. The Live Scottish Lobster Noodle Stir-Fried with Ginger and Spring Onion brings together the freshness of lobster with the aromatic essence of ginger and spring onion, creating a delightful harmony of flavours. The Claypot San Pei Chicken with Thai Basil, Baby Pak Choi, and Dried and Fresh Scallop Egg White Fried Rice with XO Sauce presents a medley of ingredients and textures.

The dessert selection features the Midnight Sun, a delightful combination of mango, black sesame, and passion fruit that offers a refreshing and indulgent finale. The Gouqi Valley showcases the richness of dark chocolate, the earthiness of matcha, and the sweetness of goji berry in a harmonious blend of flavours. Finally, the Hidden Treasure dessert, featuring strawberry, yuzu, and fennel, offers a unique and tantalising combination.

To conclude the evening, guests will be offered petit fours, teas, and coffees, along with a serving of the legendary Cognac produced by Remy Martin, Louis XIII. Louis XIII Cognac is crafted using 100% Grande Champagne Cognac, incorporating the oldest and most precious eaux-de-vies, some of which are aged over 100 years. This floral Cognac boasts notes of perfumed stone fruit, hints of honey, and toasted almond on the nose. The palate reveals citrus oil, baking spice, delicate peach notes, and culminates in a long, lingering finish.
