Wallace spent his first career in the British Army as a catering & logistics officer before retiring and commencing a civilian career.
He has operated at director level in international catering, hospitality, retail, leisure & miscellaneous support services companies.
He has twice led his division to achieve Investors in People accreditation and has managed a number of commercial catering, retail & leisure refurbishment projects in addition to having full profit responsibility for his operating division.
More recently, as a consultant, he has delivered strategic business direction to international organisations as well as management training courses on behalf of the Institute of Hospitality.
He was employed as the Club Secretary at a private members Club in London before taking up the appointment as Executive Secretary of the Master Innholders in April 2017.
He has an MBA and is involved with local community organisations
