Oliver remembers when he was a kitchen Porter in a pub as a summer job next door to his house. As the service doors opened and closed remembering hearing the buzz from the patrons in the bar but was too young to be allowed into the bar and restaurant. He’d hear the conversations of the team members coming back of house talking about how they had delighted their guests which excited him.

He has a strong belief that we, as hospitality professionals, have the responsibility to sell and promote our trade to those individuals that aspire to make a difference both outside of the industry and those that initially may only pass through, but through inspirational leadership and providing structured opportunities they could remain in the business and become ambassadors in the years to come.

One of his sponsors has written that he is a consummate hotelier and a fine example of an individual dedicated to hospitality. He has a grounded food and beverage background and an in-depth knowledge of food and culinary skills. Most importantly he has an inherent understanding of service and delivering first class quality to every guest. Oliver is a smart operator and combines a commercial strategy with refining a product which is market orientated and contemporary.
